Description
Kan Yao durian is a medium to large variety, typically weighing between 2 and 4.5 kilograms. It has a distinctive round shape with a long, thick, fibrous stem measuring approximately 10 to 14 centimeters. The fruit’s husk is adorned with short, straight, densely packed triangular spikes and varies in color from pale green to light brown or golden-brown. Beneath the spiny exterior lies a spongy, white to ivory inner layer that protects multiple chambers, each containing 3 to 4 thick and dense lobes of pale-yellow flesh, known as arils.
The arils have a semi-firm exterior that gives way to a creamy, soft, and slightly sticky interior, enveloping a small, hard seed. Even when overripe, the flesh maintains a smooth, somewhat firm consistency. Kan Yao durian is renowned for their mild, sweet, and floral aroma, distinguishing them from other durian varieties. The flavor is richly sweet, with an ambrosial quality that appeals to a wide range of palates.
