The flesh is thick, greenish-white, and has a fine, crisp texture with a sweet flavor and moderate juiciness, making it ideal for fresh eating and drying. Fresh jujubes contain 25% soluble solids and 0.42% acidity. Dried jujubes contain 79.4% sugar and 0.67% acidity, with an edible yield of 94.53%. The fruit matures in early October.
